I recently visited Darnley Coffee House whilst on a tour of Scotland. It was the highlight of my trip! From the moment I stepped inside I was made to feel welcome by the fantastically friendly staff, and was overwhelmed by the choice of daily soups. I was told by the owner, a thoroughly amusing chap by the name of Niall, that the soup there is a local speciality and is changed every day. On the day of my visit the choices were Sweet Potato and Coconut, Chicken Broth and Cullen Skink, which I was assured was a common dish in Scotland! After Niall offered to let me sample all of them, I plumped for the somewhat unusual Cullen Skink. It was a delight. A thick Broth of potato and smoked haddock, which was served with bread from a local bakery. The bread in itself was a revelation, and prompted me to order a sandwich following my soup. Though the options for sandwich fillings were not as exotic as the soups, they were made with ingredients of superb quality and were served with a delicious salad dressed with a divine balsamic reduction. I was now well into the swing of things and just couldn't resist choosing a dessert from the cake trolley which was groaning under the weight of the most delicious looking home made cakes and tray bakes. I eventually decided upon the caramel shortbread and can honestly say it rivals even my childhood memories of the stuff, the base was buttery and the carmel of a perfect sweetness and oozing texture. Over all I would reccomend this little gem to everyone visiting Stirling. And, if you don't have long...they offer a take away service!
